The National Manufacturing Sheeter Moulder is a two-step machine that prepares a dough sample for test baking similar to that of a production process.
The first step is a sheeter which uses two Teflon coated rollers which can be varied to produce different thicknesses. This process provides a dough sample of uniform thickness in which the internal gas cell structure has smaller cells with more uniform distribution.
The second step is the Moulder process which prepares the dough sample for panning. The Moulder uses three rollers which can be varied depending on sample size. Two rollers are fixed while the third can be adjusted to allow a different rate of compression. The Moulder rolls and seals the dough into its final loaf shape.
